Gbegiri is a kind of soup typically eaten by Hausa and Yoruba people of Nigeria.
Gbegiri is prepared with Ingredients like a cup of washed coatless black eyed or brown beans , red palm oil, crayfish or mashed smoked fish, Iru/dawadawa ( fermented locust beans) , minced onion bulb. Maggi, Pepper and Salt.
Procedures in Cooking Gbegiri soup are
...Soak the beans overnight or for 2-3
hours.
...Rinse and pour in a pot.
...Light your stove and place the pot on it.
...Pour enough water to cover the beans
and leave to cook until the beans becomes very soft and mushy.
...Now turn off the stove and mash the beans until smooth, add the minced onion and iru ; pour the mix through a sieve and mash any beans you see .
...Light the stove again Pour the extract back into the pot, mix well and set to boil.
...Add the red palm oil and cook until the red palm oil blends with the white beans; the color of the soup should be yellow.
...Finally, add the crayfish, maggi and salt and leave to boil together for few minutes
...You are done cooking your Gbegiri soup, serve the soup when hot to see the difference.
