5 Ethnic Nigerian Foods; Garri Soup

Garri soup is a unique Nigerian food traditionally eaten by the Benin people.

Garri soup is similar to Egusi soup, the both share ingredients in common with its difference being that instead of using egusi we use Garri soup to prepare it .

Garri soup is prepared with ingredients like, fish, meat, onions, pepper, maggi, crayfish, salt, garri (fried cassava), bitter leaf or uziza (Piper Guineense) , red oil and water.

Procedures involved in cooking the Garri soup are
... Filter the garri with a sieve to remove some giant lumps and leave the powdered ones
...Light up the stove
...Place a pot on top of the stove
... Add about 2 cups of water depending on the size of your garri
...Wash the meats with clean water and add them into the pot
...Add spices like maggi, onions, pepper, salts and the crayfish
... Wait for few minutes till the meat is ok for eating
... Wash the fish either stock fish, fresh fish or dried fish and add them into the pot
...Take a few minutes break, add the red oil and stir together
...Then add the bitter leaf and wait for your soup to soften the leaf, stir your soup again
...When the mixture in your pot boils together add a cup of the dry, sieved and fried garri, and allow to boil again
...Stir it once more
...You are done, serve the Garri soup when hot to give you a more unique taste
